Shrimp Gorgonzola

serves 4

Ingredients:

1/2 cup olive oil
4 tablespoons minced garlic
2 lbs (26/30U size) shrimp, peeled and de-veined
1/2 cup cream sherry
2 generous handfuls of fresh baby spinach
1/2 cup Gorgonzola cheese, crumbled
freshly ground black pepper to taste
a variety of good quality tortilla chips (blue corn, lime, classic, etc.)

Procedure:

  • In a skillet over medium high heat, saute the garlic in the olive oil for about 2 minutes. 
  • Add the cleaned shrimp and cook 4 minutes, stirring to keep the garlic from burning. 
  • Turn shrimp over and add the sherry.  The sherry may ignite, causing a flame (flambe), this allows the alcohol to burn off. 
  • Cook the shrimp-shrry mixture for 2 minutes. 
  • Add the spinach, tossing ingredients just to combine. 
  • Remove pan from heat and stir in the Gorgonzola cheese. 
  • Season with freshly ground pepper. 
  • Serve immediately on your favorite crisp tortilla chips.
