Stuffed Tilapia

serves 4

 

Ingredients for the Stuffing:

1 1/2 sticks butter
1/2 cup leeks, white part only
1 teaspoon minced garlic
1 lb sea scallops, chopped medium dice
1/2 cup cream sherry
juice of 1 lemon
1 cup clam juice
freshly ground pepper, to taste
10 cups crushed Ritz crackers
6 oz blue crab claw meat
1/2 cup grated Parmesan cheese
2 tablespoons dried parsley

For Tilapia Assembly:

8 Tilapia fillets (fillets will range between 3 oz - 4 oz in size)
breadcrumb-cracker mixture made with....
     1 cup plain dried bread crumbs
     1 cup crushed Ritz crackers
     1 tablespoon dried parsley
1 stick butter, melted
1 cup water


To Prepare the Stuffing:

  • In a heavy bottomed skillet, over high heat, melt the butter. 
  • Add the leeks and garlic and saute for about 3-5 minutes, bringing the scallop juices just to a boil. 
  • Add the sherry and flambe (burning off the alcohol.) 
  • Lower the heat to medium, add the lemon juice, clam juice and a generous amount of freshly ground pepper. 
  • Stir to combine and cook for 2 minutes. 
  • Turn heat off and set pan aside. 
  • The base of your stuffing is now complete. 
  • In a food processor or blender, coarsely chop the Ritaz crackers. 
  • Pour the crackers into a large bowl. 
  • Add the breadcrumbs, crabmeat, Parmesan and parsley.
  • Gently add the stuffing base, stirring just to combine. 
  • Taste and adjust seasoning.
  • Allow stuffing to cool before using.

Assemble the Tilapia:

  • Preheat oven to 400 degrees. 
  • In an 11" x 14" baking pan, place one of the tilapia fillets, skin side down, on one end of the pan.  You will placing all four serving in this pan. 
  • Spoon about 1 cup of the stuffing on the tilapia fillet, spreading the stuffing a bit to cover the entire piece of fish and top with an equal-sized fillet. 
  • Repeat the process with the remaining 6 fillets. 
  • Once all four portions have been assembled, generously sprinkle with the bread-crumb cracker mixture. 
  • Drizzle each stuffed Tilapi with about 2 tablespoons melted butter. 
  • Pour 1 1/2 cups water in the  pan and bake in a preheated oven for 12-15 minutes. 
  • Tilapia will be flaky and fall easily from a fork when cooked.
